Beauty, Faith, and Cobbler Get Better With Age

{Featuring Charlotte Diffee, Bisous Pour Tous, and her Camp-Famous Peach Cobbler}

True Beauty is transcendent through the generations.

Today, I want to honor one o Savvy's True Beaties. Meet Charlotte Diffee.

Charlotte has been a steady presence in my life since 1988, when she was my youth group leader. Our church owned a camp in East Texas, called, "Hidden Acres", where I spent all summer, every summer.

(It’s also where I fell in love with Aaron Lehmann- sitting on golden stacks of hay, the summer sun warm on our backs, while a young Aaron serenaded us with his songs. That was the moment I knew: this was the kind of life I wanted forever...But I digress.)

Charlotte was not only one of our counselors, but the "camp cook". 

And like every wise counselor, she grabbed all of us teens, put us in the kitchen, and taught us to cook! She was always patient with us (except that one time Jennifer Thompson & I got into a food fight while making the mashed potatoes...she kicked us out for that one! haha)

FOURTY years later, she’s still serving: still cooking, still loving people, still running the kitchen at Hidden Acres camp year after year.

And let me tell you: people don’t just come to the camp for the fun.

They come for her food. Literally- they're known for it!

At 82 years old, Aunt Charlotte still cooks for church camp all year long. Big pots. Full tables. Second helpings encouraged, and she still trains the kids to help. Her peach cobbler alone could start a revival.

And somehow, between feeding entire camps and loving generations of people- she also has the softest, happiest skin.

Aunt Charlotte’s Simple & Divine Peach Cobbler 🍑

(Camp-Famous & Crowd-Proven)

This is the peach cobbler people talk about. It’s easy, unfussy, and absolutely heavenly- just like her.

She taught me how to make it all those years ago, and it's still my go-to for every event when I want to show off my culinary skills. Its VERY easy to make, requires only 5 ingredients, and it will make YOU famous, too.

Ingredients

  • 1 stick butter

  • 1 cup sugar

  • 1 cup bisquick

  • 1 cup milk

  • 28 oz can peaches in heavy syrup

  • Cinnamon (to taste)

Instructions

  1. Preheat oven to 350°F.

  2. Melt butter in a baking dish.

  3. In a bowl, mix sugar, Bisquick, and milk until smooth.

  4. Pour batter over melted butter (don’t stir).

  5. Spoon peaches evenly over the top.

  6. Sprinkle generously with cinnamon.

  7. Bake for 40–45 minutes, until golden and bubbling.

Serve warm. Preferably with vanilla ice cream. Definitely with people you love.

 

I made it tonight so I could get you a few pics. But I made mine with fresh apples that I sauted in butter, sugar, and a splash of vanilla and lemon juice. 

You can make that substitution with any fruit. If the fruit is on the tart side, adding lemon zest really brings out the fruit flavor (blackberry, raspberry, or blueberry with lemon zest in this recipe is FIRE.)


What I really love about this recipe is that the dough is crispy on top and gooey inside- most cobblers are too dry in my opinion.

 I added a splash of heavenly... I mean heavy cream...
